Can You Really Eat a Cactus?

A cactus is that strange-shaped plant famous for its spiky prickles. Those prickles are the cactus' leaves! Like any leaf, they catch sunlight to make food. Since cacti live in very hot places, they need very skinny leaves that won't dry out in the sun. If you can get around those spikes, you can eat some cacti. The prickly pear cactus is one of the tastiest. The little flowers along the edges of the "paddles" will turn into fruit you can eat, and you can also eat the paddles themselves -- as long as you pluck the prickles off first!
